Cerrad coffee beans store sells specialty coffee beans in Okinawa.
We have 12 kinds of coffee beans here from blend to single origin.
You can try 8 out of all our coffee for free so that we think all customers can find what they want.
Cerrado is portugues. It means closed.
There actually is a place called Cerrado where people grow coffee.
Initially Cerrado wasn't a suitable place to grow coffee but they made a lot of effort.
Until then, the place hadn't been a great place to grow anything.
But they cultivated and made it into good field.
It really broadened the possibility. and I wanted to do the same thing with my company.
That's what my father told me.

You can normally see us grinding cacao beans something like that around 7 am.

Lots of chocolate drinks.
These are bad beans we have picked.
Where is it from?
We get cacao beans from 4 countries.
Vietnam, Columbia, Ghana and Cuba.
You lose only a few percent of coffee beans if you carefully sort out bad beans.
But we lose about 30 percent of cacao beans.
It depends on where it comes from and so on.
This bean is dead.
These beans were stuck together while fermenting.
Do you sort out here?
Yes.
These are from Ghana.
It smells like vanilla.

If you compare these beans...you can clearly see the difference.
Cacao beans is being fermented with its flesh.
The flesh remains a little.
These beans are dead.
They don't taste really good.

These beans are provided by Japanese, so it's not that bad I think.
Especially Ghana is like a... surprising.
But Ghana sure has its own unique flavor.

We used to make sharper taste that goes well with white wine.

flavor changes as you eat.
coarse grind is one of our characteristic.
This is 72% Cuba.
combined with 100% Tarabajima Raw cane sugar.
Even though it's all shown "sugar" on the package, it tastes different when we use different sugar.
Why is this chocolate so smooth and soft?
because it's stone-ground for a long time.
We only grind for an hour for this one. It's kind of coarse so that you probably feel it's fresh.
for this one, we grind for a day.
There's a process called refining.
That makes different flavor.
We are going to have dinner at Tamie's.
They closed down once, but reopened recently at the same place.
