And Haris is going to join us with making my own recipe coffee.

Today, I'm going to make Ice Coffee Lemonade with Rosemary.

Imagine, something cold and refreshing combines with Rosemary spices.

You must be so curious, Ris ?

Yeah, I'm curious actually with the taste.

Are you ready my partner for making coffee ?

He looks so ready.

Haris will help me to make.

I will do the coffee and he will do something for lemonade.

There is brown sugar.

It also has longan and Rosemary.

For the lemonade, I had squeeze the lemon just now.

You need around 150ml lemon water.

And also 250 gram of brown sugar.

For the Rosemary,

it's all depends on your taste.

When you are in the mood, just put as many as you want.

If you don't like Rosemary, just put a little bit.

Make a little twist in your lemon.

And this longan will add on the end of the process.

Of course, today I want to use Kerinci Coffee.

Can you explain how is the Kerinci taste ?

There are the profile notes,

Fresh cedar aromatics.

Sweet Acidity.

Blackberry and Cocoa flavor.

Juicy body with herbal finish.

So, it is so suitable to mix with this kind of drinks.

The taste will be so fresh.

Yeah, that's right !

I'm going to brew the coffee.

Haris is going to help to blend everything.

First, we need 230 gram of hot water.

Use the hot water to dissolve the brown sugar.

There you go.

I just pour the hot water for 230 gram.

Okay, I have poured the hot water.

Put in all the brown sugar.

As I need 250 gram sugar.

Stir the brown sugar until it dissolves.

Then, let's brew the coffee.

I need around 27 gram of coffee beans.

27 gram.

I will grind the coffee to medium coarse.

As today, I'm using Chemex.

Okay, a little bit to 27 gram.

Okay, 27 gram.

Everything is freshly prepared by me.

So, coffee lovers, you can feel how fresh the brewed coffee.

Wet all the paper filter.

There is no dust comes from the paper filter into the coffee.

Get rid of any paper tastes.

For the Chemex, I will add ice cubes on the bottom.

So, I can feel the refreshing sensation.

Even more, the weather is quite humid.

Have you done ?

Yeah, I've done.

Quite fast.

Next, put in the lemon.

Put in directly all the lemon.

For the ice cube, I need around 230 gram.

Until it blends completely.

Make sure it blends completely.

They will be unhappy, if you don't blend completely.

230 gram.

Next, add the coffee ground.

And for...

And for the water, I need around 220 gram.

All has been ready ? Great !

Now, it's my turn.

Pour slowly the water.

With this kind of method, it produces more bright coffee.

For Chemex, we usually gets more clean taste.

It also has more body than other coffee maker like V60.

So, we will mix the coffee with other things makes more refreshing.

All I want is refreshing.

To make this Ice Coffee Lemonade with using Chemex.

So, we can feel the taste of the freshness sensation.

Wait for a while.

Want to get free coffee ?

This is different, sis.

I brew coffee with Chemex for around 3 minutes.

Actually making coffee doesn't need any standard.

Still have guideline.

But, it all depends on taste.

In truth, it has ratios like 1 : 15 or 1 : 17.

But, it all depends on taste.

Need to do some experiments as well.

If you think you have reached to the target,

then just keep continue.

And you can do some experiments.

Like this coffee, suitable to mix with other sensation or ingredients.

You can get another coffee taste.

There is nothing right or wrong.

The most important thing is keep practicing and practicing.

That's right !

It almost reaches the target.

And maybe...

For those, who likes coffee may wonder where is the coffee taste.

Actually, I've mix-and-match the taste.

The coffee sensation keep staying in the taste.

In other hands, you still can feel other sensation.

For example like lemon.

Brown sugar.

And by the way, this Rosemary is the important thing. But, I almost forgot.

This is Rosemary.

Rosemary is a spice.

You can get this spice at any supermarket.

Usually, I just used my hands.

Don't worry ! My hand is clean.

Usually, I add 4 pinch.

Two.

Three.

Four.

4 pinch.

Put all inside.

Stir all together.

Stir slowly for a little bit.

Actually, for the Rosemary,

You want to feel more the Rosemary aroma.

It's okay if you soak Rosemary in water for longer.

Yeah, I've done !

It's quite simple to make.

With just using...

With just using your favorite coffee.

I add one by one the ice cube to the cup.

Coffee does not have a long history in VN since it was first introduced by the French in 1857.

Many years have gone, Vietnamese have turned it into a drink of their own – something very unique and something very proud of.

There are many kinds of coffee you may find when you travel to Vietnam, such as Vietnamese black coffee, milk coffee, Bac Xiu, Cat poop coffee, egg coffee, and so on.

Vietnamese people usually go to cafe to meet their friends, have breakfast, talk about work, enjoy a cup of coffee while watching surrounding landscapes.

To people who live in Saigon, coffee is considered to be a part of life and work. Due to the habit and religion, the drinking coffee style in each place is very different.

Saigon's drinking coffee style is very generous. Only in Saigon, you can find that people drink a cup of coffee with a straw and it tastes very sweet.

Traveling to Hanoi, you won't be surprised if Hanoians sit in a very old and poor coffee shop silently watch the noisy and crowded street.

They also have created a special coffee drink: Egg coffee.

So, we will find out what do Saigonese think about coffee culture and especially, the Egg Coffee.

In the past, I only drank milk and iced coffee. However, on a trip to Hanoi, my friend invited me to try egg coffee. That was Giảng coffee, which was very famous in Hanoi. Since then, I have turned to love egg coffee.

So, The result we found that there are two groups of people when we asked about Egg Coffee. The first group is that a lot of people who don't even know.

What is an Egg coffee? And I belong to that group. The second group is people who are already familiar with it.

You would be really surprised when you acknowledge that Vietnamese Egg Coffee is ranked number 1 in the list of "Seventeen ways to drink coffee around the world" on BuzzFeed.

So, I'm right here, on Bui Vien Street. This street is very famous. You know why? A lot of foreigners visit this street and this is the most popular place in Ho Chi Minh city.

The Little Ha Noi- Egg coffee nestled in a small alley on Bui Vien street - the town of the backpackers. It has a quaint, elegant style, and a simple interior decoration with antique furniture.

This coffee shop is suitable for anyone who love the romantic flavor of Northern coffee but can only try that in Sai Gon. The sweet fragrance of eggs, in combination with the aroma of coffee, can leave an unforgettable experience.

Egg Coffee is at 178 Bui Vien Street, District 1. This coffee shop is quite small but very impressive with modern style of decoration. This is suitable with the lifestyle of the Saigonese - dynamic and busy.

And after searching on the Internet we found out that there are two Egg coffee shops on Bui Vien street. The first one named Little Hanoi and the second named Egg Coffee.

And I am here right now with the Egg Coffee, so, we shall give it a try, right? Come on!

This is the tranditional milk coffee. And these two are egg coffees which are served in hot and cold.

At first when I imagined about the egg coffee, I think that it's just a black coffee served with a boiled egg.

I also googled it and I found out that all the images of the egg coffee was amazing, just like these two in front of me right now.

It's not a simple cup of coffee anymore, it likes an art.

Look at this! Uhm... Its smell is amazing. Uhm it's sweet. You know... like ... the smell of the coffee is very strong!

Tasting egg coffee in the right way will make us experience the perfect flavor of this kind of coffee.

If you want to keep it traditional, put your cup in a bowl of hot water, so the coffee stays hot in a very long time.

It is highly recommended that guests should sip coffee when it is still hot and steaming.

Well, at the first time enjoying Vietnamese Egg Coffee, travelers may feel strange and unpleasant. However, only after a few times trying, they will soon get familiar with the taste and find it hard to forget.

So actually at first I think that if this kind of egg coffee is served with cold water, it would be a lot of unpleasant smell.

A formula to brew a cup of egg coffee is not so complicated. However, it requires the sophistication and the meticulosity.

First of all, we need to brew strong black coffee using a special coffee filter. The coffee used must be pure in order to achieve strong aroma.

Experts warn that if we use instant coffee, we will waste the entire tasty experience that is waiting for us.

After making a perfect black coffee layer, the next stage is to make egg frost. This is a very important part because it decides mostly the flavor of the egg coffee.

Remember that bartenders have to choose fresh eggs to avoid unpleasant smell which makes coffee hard to drink.

When cracking eggs, bartenders will discard whites and only use yolks and blend them with condensed milk to create frothy top layer. The mixture is then whisked together until a thick Custard-like consistency is formed.

It looks like the thick, foamy cap that sits on top of a cappuccino. Finally, in a clear coffee cup, bartenders will pour brewed coffee and add the fluffy egg mixture on the top.

You see, there are no special ingredients in thí formula. However, very few coffee shops can successfully make this drink. Maybe the secret to make excellent egg coffee is the portion of eggs, coffee and milk.

Alright, I did have a very great time enjoying different cups of Egg coffee in the Little Hanoi, as well as the Egg Coffee shop.

Hello everyone, my name is Ly and now I am here at Giang coffee 119 Tran Phu Street. Giang coffee is one of the most long-standing and famous coffee shop which has a delicious drink - egg coffee. Let's follow me and enjoy this special drink together.

Finally I have had the hot egg coffee cup in my hand. As you can see, the cup of coffee is served in a bowl of hot water that helps to maintain the temperature of the drink.

On top of the coffee cup, we can see clearly a thick layer of fluffy egg mixture and the attractive smell of it will really impress you. The fluffy egg layer is condensed. You can feel the greasy taste, especially the sweet smell of it.

How about the under layer? I will stir it up to find out.

Wow the combination between the original black coffee and the fluffy egg layer is absolutely amazing. It is not too bitter. Especially girls who want to try coffee but afraid of its bitter.

So let's go with me to meet her and have a short interview to find out what a Saigonese girl think about some basic differences between egg coffee in Hanoi and Saigon.

So I have some questions to ask you about your experiences in enjoying egg coffee in Hanoi and Saigon. What do you think about some main differences?

Well first of all, I would like to say about the weather. As you know that the weather in Hanoi is cooler than in Saigon and that must be absolutely awesome that you have a cup of hot egg coffee to enjoy in such a cold weather.

That's about my feeling and I would say that the decoration between the two shops is also totally different.

I think that the shop in HCMC is more modern while in Hanoi it is more rustic and traditional with low plastic stools and tables and it was also crowded there than in Saigon.

How about the taste of the coffee?

I think that the coffee in Hanoi is a little bit bitterer and they also served the cup of hot egg coffee in a small dish of hot water to maintain the temperature of the drink and actually the price is also lower and the cup is also bigger in size.

First of all is about the concept and tendency of the Hanoian and Saigonese. Iced Coffee has become a Saigonese specialty for a long time. Many people cannot change the habit of drinking it day in day out.

Moreover, because of the hustle and bustle of HCMC, people tend to buy and take away coffee rather than sitting to relax and enjoy a cup of coffee at the store.

Regarding Hanoi, the pace of life is slower than in Saigon. People are more enjoyable and they often get together at the coffee shop to shoot the breeze.

The second reason is the effect of temperature and atmosphere The average temperature in Hanoi is usually lower than in Saigon.

So hot drinks, like hot coffee or egg coffee, are the choice of many Hanoians, while in Saigon, people tend to use cold drink to gain energy and be awake.

The third reason is about differences in characteristics.

For them, the southern people are more out-spoken which is shown in their habit when flavoring the food.

Everything must be charming: the strong sense of each taste must be considered when cooking.

And so does the coffee, it has to be bitter as it must be. That's the reason why iced coffee is so popular in the South.

On the other hand, Northerners are more reserved and complicated. The way that the food is tasted must be balanced among sour, salty, bitter and sweet.

That also affects the way they use coffee. A delicious one must be a combination between bitter and sweet. Therefore, egg coffee is a drink that can certainly satisfy them.

Egg coffee is a very special culture that needs preserving and spreading. Although having different flavors in different regions, they all convey very unique Vietnamese culture to other countries around the world.
