How to make the perfect coffee with All Press and eve Sleep - Duration: 3:41.
Hey I'm Cam from All Press. I'm just going to take you through brewing with
the Colita Pour-Over Filter Brewer. The first thing I'm going to do is take my paper
filter and pre rinse and preheat my brewing device. The purpose of this is to
rinse any papery taste out of the paper filter and also to heat up the carafe
and the ceramic filter brewer itself just to have a more consistent more
stable temperature throughout the brew.
Okay we always brew to a 1 to 16 ratio so great starting point, that means one
part of coffee to 16 parts water. So today I will do 20 grams coffee to 320
grams of water.
If you can it's always best to grind your coffee fresh right before you brew
just to give yourself much more flavor and aroma. Okay level off the coffee bed
by giving it a shake and now I'm going to start my brew and start by doing a 60
gram bloom. I start my timer at the same time add 60 grams of water and the
purpose of the bloom is to release the aromas that are in the coffee and also
just to saturate all of the coffee grind, so we don't want any dry
pockets dry spots in the brewer because they'll cause under extraction. So the
blooms going to run for 30 seconds at the end of that I do my first pour. I'm
going to pour to 120 mils 120 grams and then let it draw down, I don't want it to
dry it completely so I'm going to top it up two or three more times throughout
the brew stopping at 320 grams.
When I pour I move around concentrically from the center out to the side
always being careful not to pour onto the paper filter itself because the
water will just run through and bypass the coffee. Coming around the two-minute
mark here I'm just going to do my final pour. Okay we're at 320 now and we're
just allowing it to draw down. Okay we're almost done, a good sign of a well brewed
coffee is a nice flat bed of coffee grounds in the bottom of the brewer, so
when the water drips through, that means it's been extracted nice and evenly. Okay
three and a half minutes - it's a great brew

Today's coffee comes from D-Town.

- Today we are reviewing D-Town Roaster's Guatemala blend
- Right.
- They are based in Decatur, Illinois.
They are a, what we would call a micro roaster,
just a very small company
and we've got some history with them
if you wanna-- - Right.
The woman who roasts it, she is the girlfriend
of a guy that I served in Iraq with
and he sent us the coffee to try
and we're always nervous about trying coffees
that people we know make and small companies.
- Yeah, or even that we know that people like
and they're like "Hey, gotta try this,"
and we're like "Oh no, what if we don't like it?"
- So sometimes, we just,
we just try it and then we don't review it
if we don't like it.
But... - This stuff.
- We were pleased with this.
- Oh yeah, very, very good coffee.
So they just started in 2016,
so they're a very new company,
but they are in some coffee shops in Decatur
and they also sell at farmer's markets and stuff.

- But let's get into what we - Oh yeah.
- Tasted in this coffee.
It was good so that way we were like oh okay.
- Yeah, I'm gonna put this down.
- Alright.
- Now I'm back, so...
- This is the Guatemala blend, and it kinda feels
like we're near the equator.
- (laughs) Yes. - Right now.
- It's like 100 and I don't know.
It feels definitely higher than 100 degrees.
- We're currently in Apaca, Florida
so it's right there north of Orlando.
- Yeah. - And it is super hot.
- Yeah, yeah, it is.
It's right in the end of June.
- Yeah, so this coffee...
- First of all,
any kind of coffee from a local roaster, or a micro roaster,
it's just so good.
I mean, it's just different
than anything you can get in the store.
- You can tell they're not trying to please everyone
like a lot of times, the stuff you buy in the store
is middle of the road.
- Right, there's no outstanding flavor or anything.
It's just kinda like they're trying to be people pleasers
but this is just so much more flavorful, I think.
- Yeah, so I'm getting like a nuttiness.
Taste that for sure.
- Yeah, nutty, it's roasty,
chocolatey to me is what I get a lot of.
- And really easy to drink.
- Very smooth.
It's just fantastic.
I mean, I love this coffee
and I'm sad that our bag is slowly dwindling down.
It's like "How are we going to get more of this
"in our hands?"
- Yeah, she kept trying to drink it and I said
"Wait, we haven't done the review yet.
"Don't drink it all.
"We can't drink it all, we have to do the review."
- Yeah, yeah, but very, very good.
- So yeah, I would say four doughnuts for sure.
- Oh yeah.
- I don't even know what the price is
but I'm assuming it's right along the lines
with other micro roasters.
- Yeah, yeah.
