Our first location was Te Aro Coffee in the east end.

We opened that in Leslieville in 2009.

A few years after that,

we wanted to expand in the west end.

Ossington was up and coming at the time and we opened Crafted

in 2011. After we

opened Crafted, we ended up rebranding to Pilot Coffee

Roasters and we moved into our

dedicated roasting facility.

The last few years, we've been focused on really expanding our retail footprint

and opening more locations in the city. We got

First Canadian Place, Union Station,

Toronto Street and most recently we moved

Crafted down to this location.

I think flat whites have really gained

popularity over the last few years.

It has a smaller coffee to milk ratio

in comparisons to other more

conventional drinks, like a latte. So it really allows

the coffee flavour to shine through in the drink.

Because speciality coffee is so focused

on nuanced tasting notes, the flat white

really best represents that

in a coffee.

In a flat white, first you start

with pulling a double shot of espresso.

Next you're going to allow the espresso shot to pull.

I'll be steaming the milk.

I'll be steaming about four ounces

of milk for this drink.

Following that, I will try

to make the most beautiful latte

art that I can, resulting

in the beautiful cup here in front of you.

The inspiration behind this was building a space

that would be unique in the community

but also is in line with the aesthetics of

Pilot, so really kind of minimalist

and modern.

A lot of natural light,

comfortable seating for our customers.

We've got cold brew on tap, a pour-over system

and we built the space so that

we could offer the community experiences like

coffee tastings and courses.

So since we've opened in 2009, we've seen

a change. The first few years that we opened

they weren't many specialty cafes.

And now you see cafes opening

on every corner, so it's a really exciting time to be in coffee.

Coffee + Kids Play Area = Ridgetop Coffee Loudoun Moms - Duration: 2:21.

- Hi everyone, it's Laura Griffin, the Loudoun Mom.

So I'm at one of my favorite places today,

Ridgetop Coffee, here in Sterling.

And as a mom of two I know how hard it can be

to take your kids out to a place

and have a place for them to have fun,

as well as mom to kind of connect with other moms

and also get your morning cup of coffee,

'cause I know how important that is.

So we're at Ridgetop Coffee,

and those of you that haven't been,

it's a great place to get a cup of coffee and a muffin,

chat with friends, and they've got a playground in the back

so your kids are entertained.

They've got crafts out, they've got games.

There's coloring.

There's a playground.

And so your kids can really come, have fun,

and you can get your cup of coffee

and meet with your friends.

When I take my kids out I'm always worried like,

Are they going to be loud?

Are the people around us gonna think,

oh my gosh, the kids are being too noisy?

Here, it doesn't matter.

As you can tell, it's kind of noisy,

there's a lot of people talking,

kids are playing and having fun.

I think one of the biggest things here is your kids can come

and have fun and be kids.

And you can still enjoy a normal cup of coffee

and feel like, kind of like a normal person again at times.

So what I love about here,

is the playground that they have in the back.

And if you haven't been here in a few months

you need to stop by, cause this week they just opened up

their new playground on Saturday.

And if you've got older ones,

they've got coloring.

They've also got a really cool puzzle

and game area and tons of seating.

So you can literally sit here,

and your kids can be playing.

The nice thing about the play area

is it's all glassed and closed so you can still watch

your children while enjoying your cup of coffee

or your muffin.

And no matter how many people are here,

I can always find a seat.

They've got a cute little meeting room,

so if I need to meet clients and they've got children

or something they can go hang out,

and we can still talk and have a conversation.

One of the scariest things about becoming a mom

was I knew my morning routine would change.

In the mornings I would just be worried about

getting my hair, my makeup done, getting dressed,

getting my coffee, getting out the door,

and getting to work.

And now I have to worry about the littles,

are they dressed, all those things.

And I think it really takes a few weeks

or even a few months to kind of get in your comfort zone.

The other thing that I always do,

is make sure everything's kind of done the night before.

Lunches are packed, clothes are laid out, even my clothes.

As a mom, sometimes we forget to slow down and enjoy life,

so one of the things to do is come on over

to Ridgetop Coffee, and just kind of slow down and relax

and enjoy one of the luxuries, which to me is coffee.
